I know that probably sounds funny to you. Well, on second thought perhaps it doesn’t. Okay, now I’m a little curious…any chance you are retired? married? single? dating? So,  anyway. ..little, by little

Recently, we went on a mini road trip to Port Orford, the oldest town on the Oregon Coast and the most westerly in the 48 states. http://www.enjoyportorford.com

Then we headed up to view the ocean.

And, boy oh boy….were we surprized at how gorgeous it was. I love gorgeousness!

I had to pinch myself to think I am surrounded by such beauty. (just kidding…I didn’t really pinch myself)

On our way back home we decided to check out and tour the Cape Blanco lighthouse.

Cape Blanco is beautiful. It is located at the furthest tip of the Oregon coast. So if you plan on visiting, make sure to bring a little sweater, because it can get quite cool, and windy. We were very lucky that the weather was sunny, with just a little wind.

Along the way we found a hiking path that went through a forest of trees.

The path was around  1/2 mile long and ended up over looking the ocean. I told my husband that all the walking was making me hungry again. Ha! Ha! The end of a perfect mini road trip!

With summer getting ready to end, it’s a busy time for having company. What often leaves a lasting impression is a meal or a dish that makes your guests feel loved. Here’s a wonderful quick muffin recipe everyone will enjoy. Especially you!

QUICK BERRY MUFFINS

Muffins:

2 cups biscuit baking mix

3/4 cup sugar

1 cup sour cream

2 eggs, beaten

3 tablespoons butter, melted

1 teaspoon vanilla extract

1 cup chopped strawberries

Topping:

3 tablespoons brown sugar

3 tablespoons sour cream

1/2 cup shredded coconut

  1. Preheat over to 350. Spray 12 muffin cups with nonstick cooking spray. In a large mixing bowl, combine baking mix and sugar; stir.
  2. In a small bowl, combine 1 cup sour cream, eggs, butter, and vanilla extract; stir. Add to baking mix mixture, stirring just until combined. Add strawberries to batter; gently fold in. Spoon batter into muffin cups.
  3. In a small bowl, combine 3 tablespoons sour cream, brown sugar, and shredded coconut; stir. Spoon on top of muffin batter.
  4. Bake for 20-25 minutes, or until the tops are golden brown. Turn off oven, and allow muffins to remain in oven for another 10 minutes. Remove from oven, and cool for 5 minutes before serving.
  5. Enjoy!
