that being said…

  it’s vitally important for me to take good care of myself in order for me to feel at my best, and to be as healthy as possible. I’ve been re-evaluating my life… taking a fresh look at how well I spend my time. I wish to joyfully go about my daily rituals appreciating life’s precious moments along the way.

What’s Cooking?

I don’t know about you but I’m always looking for simple homemade chili recipes… I have discovered the best ones usually are easy to make. I always substitute plant base meat in place of the regular beef to create a cozy comfort food…delicious and homemade…which is perfect!

💗INGREDIENTS💗

  • 2 pounds ground beef or turkey (I substitute plant based meat)
  • 2 small green peppers, about 2 cups diced
  • 1 small yellow onion, about 1½ cups diced
  • 2 (15-ounce) cans diced tomatoes
  • 15-ounce can tomato sauce
  • 6-ounce can tomato paste
  • 15 ounces of water
  • 2 (15-ounce) cans kidney beans, drained and rinsed
  • 3 tablespoons chili powder
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 3 tablespoons cumin
  • 1 tablespoon paprika
  • 1 teaspoon chipotle powder
  • ½ teaspoon cayenne pepper
  • ½ tablespoon salt
  • 1 teaspoon white pepper
  • ½ teaspoon baking soda, optional to cut acidity

☕️DIRECTIONS

In a large dutch oven, saute diced peppers and onions until translucent and they start to caramelize.

Add seasonings (minus the baking soda) and cook for 1 to 2 minutes, stirring continuously.

Add meat and brown until just done.

Pour in the tomato sauce, diced tomatoes, water, and tomato paste.

Bring to a simmer over medium low heat and cook for about 15 minutes. Then add the drained beans.

Stir in the baking soda. The sauce will start to bubble up. Stir over medium heat until the bubbles have gone away.

Remove from heat add your favorite toppings and Enjoy!

Topped with Cheddar cheese…sour cream & cornbread

    Real comfort food indeed!!!! (we drink so much 2% milk in the Winter with our Comfort foods!!!!) I love the new drapes….very elegant!

    Oh now I am commenting again after I watched your video and saw the whole room!!!! I thought that your door opened the opposite way with the plate rail to the right! I was happy to see more of your layout of your living room and I love that you bought the end table and oh I LOVE that GLAM tea cart on the other side of the sofa!!!!! Hey Anastasia….we see you xo
