A Day In A Life…Joyful Simplicities…& A Mini Haul

I celebrate myself, and sing myself I loafe and invite my soul…-Walt Whitman

Hello, sweet friends…

Happy February!

💕

I am very lucky to have several antique/junk stores along where I live…

So on a beautiful sunny morning this past week…

I set out on the open road…

visiting three…

It was fun to peruse through small isles…

discovering many delights…

This is an activity that brings me peace… pleasure…and much joy.

I enjoy getting different ideas for creating a little bit of this & that…which is definitely a passion of mine.

With a grateful heart…a few small items and memories of a wonderful day I returned home…

refreshed and ready to begin the month with romantic flare.

👩‍🍳

What’s Cooking

Most definitely one of my favorite meals is fettuccine with shrimp. And so this week I celebrated a new month with preparing this dish for dinner. The best part of this very comforting dinner is that it can be ready in only 30 minutes…now that is something to LOVE!

Shrimp Alfredo

Ingredients

  • 1 lb fettuccine pasta
  • 2 tbsp butter
  • 2 lbs shrimp
  • salt
  • fresh cracked black pepper
  • 1/2 cup dry Parmesan cheese

Alfredo Sauce

  • 2 tbsp butter
  • 2 garlic cloves
  • 1 tbsp all purpose flour
  • 2 cups heavy whipping cream
  • 1/4 cup sour cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup dry Parmesan cheese
  • salt
  • fresh cracked black pepper

Instructions

Fettuccine:

  • Start cooking pasta at the same time as starting the sauce.
  • Bring a pot of water to boil and salt the water. Salt it generously so that pasta gets seasoned as it cooks.
  • Add pasta and cook according to the package suggested time. Don’t overcook the pasta because it will continue to cook while coated in hot Alfredo sauce.
  • Once pasta is done, strain it and add it back to the pot.

Alfredo Sauce:

  • Measure your ingredients ahead of time because cooking the sauce goes fast.
  • In a medium, heavy bottom sauce pot, melt butter over medium heat. Once butter is melted, add pressed garlic. Cook garlic until it’s fragrant and sprinkle flour over it. Stir until flour is all mixed with butter and slowly pour in heavy whipping cream while constantly stirring.
  • Gently stir the mixture together and let it heat through. (Don’t let it boil!) Once heavy cream is hot, whisk in sour cream, Parmesan cheeses, salt, and pepper. Lower heat to medium-low and gently stir until grated cheese melts and incorporates.
  • Keep cooking over medium-low heat for about 5 minutes, stirring often.
  • Once sauce is ready mix it with cooked pasta. (Reserve a little bit of sauce to drizzle over shrimp.)

Shrimp:

  • Clean, de-vein, and take all the shells off shrimp if needed.
  • Use a mixing bowl to season shrimp with salt and pepper. Add dry Parmesan cheese and toss until it’s evenly spread out.
  • Preheat a large cooking pan over medium-high heat and add butter. Melt butter and add shrimp. Cook shrimp until pink and opaque on one side and flip them all over. Cook on the other side until just turns pink and opaque. Take shrimp out of the pan right away so it doesn’t keep cooking.
  • Portion sauce coated pasta into large bowls and top it off with sautéed shrimp. Drizzle a little sauce over shrimp.

    Happy Valentine’s Day❤️

It was so wonderful to see a sunny day, sheep in the fields, ducks on the water, and GREEN! I see inches and inches of white out my windows. The Temp this morning was 3 degrees!!!! Will have groceries delivered later today, so need to get some of the inches off the driveway. Can’t go too deep because of the ice under it all. It is interesting process for me: Have to use a cane, 24 and 7, so I use the shovel as my cane! Must present an interesting picture!!!!
And I do not feel safe going into any stores. People around here do not vaccinate or wear masks. Infringes on their rights. Nobody seems to care about another one’s rights to survive and not get sick and die.
Loved seeing your ‘haul’! I too used to love browsing in small antique and shops and flea markets. So few have survived!! Do use an online auction, but letting things isolate and then receive a thorough cleaning cleaning is very frustrating. From the amount of dust and grime, it is obvious people have not cleaned their items. Don’t understand that mindset. Hope your items were cleaned and sparkling!! They seemed to be- great for you.
Your meal looked lovely. Hope it was as tasty as it looked. Take care and be safe.

      Hello Nancy,
I’m hoping your weather gets a bit more mild soon. Please be careful shoveling all that snow! You are such a precious lady…xox

Oh Donna how lucky you are to have visited 3 times to a local antique shop! I hope you too were able to find what you were hunting for…the hunt is the best part I think.
