It’s the little things that make me happy…

the order I put into my corner of the universe…

Joe and I preparing soup…

this is where I experience the most joy.


That being said…much of this month has been spent away from home…

visiting family and friends in California and Central Oregon.

It took a bit of planning…

a conscious decision & willingness to take the time for others

traveling to visit those very important people in my life…

This past week discussing the 2020 Garden Tour…

It’s often so easy for me to get caught up in my own life…

that I often forget the importance of going the extra mile (literally)

Now with Thanksgiving…

just around the corner…

I’m experiencing a deeper gratitude in my heart…

and now I feel much more at home…

There are many recipes for bean soup that are delicious. Here is one that Joe and I made earlier in the week on a cold Fall day. I think you’ll enjoy it.

13 Bean Soup Recipe

Ingredients

2 cups 13 bean soup mix

one cup onion chopped

one 15 ounce can tomato sauce or 1 quart tomatoes

1 tablespoon chili powder

two cloves garlic

1 teaspoon dried cilantro

1 teaspoon dried parsley

2 1/2 quarts vegetable or chicken stock (you can also use water)

If you have a slow cooker all you need to do is put all these ingredients into it and then cook on low 6 to 8 hours. (high four to eight) I used a cast iron pot & slow cooked for about 4.

Directions

Rinse beans and then soak overnight add water to cover. In the morning drain and rinse the beans. Combine the beans with 2 1/4 cups of broth (or water & ham hock) Bring to a boil. Reduce heat and simmer until beans are soft. (3 to 4 hours) Add onions, tomato sauce or tomatoes and seasonings. Simmer for 30 minutes. Makes 8 to 10 servings.

*For an interesting variation Joe & I added apple sage vegan sausage & carrots.

      Good morning my friend,
      I certainly love all the tinkle that your home is showing…not sure mine will meet up with quite the same Christmas decor. I still am working at being a semi- minimalist however when Santa comes in December it’s a festive delightful minimal!

      Hi Delores,
      What a special treat it was for me to see you here this morning. I so enjoyed having you and Wayne as our neighbors…as a matter of fact the day your moving van drove away I had teary eyes. You were both so kind. Anyway…Joe and I moved a bit inland (15 miles) into a beautiful home that I’ve had an affinity towards since moving to the coast. If you are ever in the area please come visit. Thanksgiving blessings to you and Wayne.
