Hello everyone! This week, I wanted to share a delightful summer recipe that I recently tried, thanks to a friend I met at my P.E.O. meeting. This treat turned out to be so delicious that I had to make it myself. It’s an old recipe that’s been enjoyed for years, and you might have tried it before. However, it was new to me, and I absolutely loved it.
Aside from diving into this recipe, I also indulged in a self-care day. I spent some time alone, enjoyed lunch at a local restaurant, and visited a few charming independent shops.
The weather was perfect for an outdoor walk, making my self-care day even more delightful.
But back to the star of this week—Strawberry Pretzel Dessert/Salad. Here’s how you can prepare it:
Ingredients
- Crust:
- 2 cups crushed pretzels (about 8 ounces)
- ¾ cup melted butter
- 3 tablespoons sugar
- Filling:
- 2 cups whipped topping
- 1 package (8 ounces) cream cheese, softened
- 1 cup sugar
- Topping:
- 2 packages (3 ounces each) strawberry gelatin
- 2 cups boiling water
- 2 packages (16 ounces each) frozen sweetened, sliced strawberries, thawed
- Optional: Additional whipped topping and pretzels for garnish
Directions
- Preheat the oven: to 350°F (175°C).
- Prepare the crust: In a bowl, combine the crushed pretzels, melted butter, and sugar. Press the mixture into an ungreased 13×9-inch baking dish. Bake for 10 minutes, then cool on a wire rack.
- Make the filling: In a small bowl, beat the whipped topping, cream cheese, and sugar until smooth. Spread this mixture over the cooled pretzel crust and refrigerate until chilled.
- Prepare the topping: Dissolve the gelatin in boiling water in a large bowl. Stir in the sweetened, sliced strawberries. Chill the mixture until it is partially set.
- Assemble the dessert: Carefully spoon the partially set gelatin mixture over the cream cheese filling. Chill the entire dessert until firm, which should take about 4-6 hours.
- Serve: Cut into squares and, if desired, serve with additional whipped topping and pretzels as a garnish.
