Hello, sweet friend…
I hope you are enjoying your summer…
When I reflect over my own…
I have really enjoyed nesting in our home…
whether it’s been sitting on the back deck…
hanging pictures…
trying out a new recipe…
or taking a walk along the river in late afternoon…
allowing each moment be what it is…
not holding too tightly on to what I’ve thought it should be…
Reflecting helps me with this process…
looking ahead with a deeper understanding of what makes life valuable…

WHAT’S COOKING?
I’m on a no bake kick for this week…(our oven is taking a vacation) 🥰 I decided to share a chocolate mousse recipe that needs no baking, and is as easy to whip up as it is delicious!
CHOCOLATE MOUSSE (easy)
Ingredients
- 1 cup heavy whipping cream
- ¼ cup Cocoa powder
- 5 Tablespoons powdered sugar
- ¼ teaspoon vanilla
Instructions
- In a large bowl with a handheld mixer or the bowl of a stand mixer fitted with the whisk attachment, whip the heavy cream on high speed until thick and frothy.
- Stop the mixer and sift in the cocoa powder and powdered sugar. Add the vanilla, then beat again on low until cocoa powder and powdered sugar are mostly incorporated. You may also opt to fold the mixture with a spatula instead of whipping on low.
- Increase the mixer speed to high again and whip until medium peaks form. Use immediately or chill until ready to use. Portion into dessert cups and add toppings if desired.
Very glad for the reminder to take time to reflect on life!
Your flowers are still very stunning and the chocolate mousse looks most inviting.
Thank you
