As I prepare for my Harvest Tea, the excitement is really starting to build! This is more than just a gathering; it’s a special fundraiser for my P.E.O. chapter here in my local community, and I could’t be more thrilled about how things are shaping up. When I initially sent out the invitations, I was expecting a small, intimate group, given the event falls during the week. People are often busy with work, vacations, or other commitments, so I envisioned hosting just a handful of guests in my cozy dining alcove.
To my surprise (and delight), more people are planning to attend than I originally anticipated. While this is wonderful news for the fundraiser, it also means my small space will be quite snug! It’s definitely going to be a cozy endeavor, and I’m laughing to myself because I’m not even sure where I’ll be sitting! But that’s part of the fun, right?
Now, for the finishing touches: today I’ll be setting up the final tablescape and decorations. I’m going for a warm, welcoming look to reflect the harvest season. Think colorful autumn hues, little pumpkins, and rustic touches to make it feel festive and inviting.
As for the menu, I’m especially excited to serve a new recipe for quiche. I made it earlier this week, and after my husband gave it a glowing review (he said it was excellent). I knew it would be perfect for this gathering. I’ll also be serving a light and simple salad, along with some sweet treats…lemon bars and chocolate brownies, and perhaps a few grapes for a fresh touch.
In addition to the quiche, and other goodies, I’ll be serving homemade scones with mini chocolate chips for a bit of extra indulgence. to compliment the scones, there will be lemon curd, strawberry jam, peach jam, and of course, clotted cream…because what’s a proper tea without clotted cream?
To add a little something extra, I’ve also prepared a small gift for each of my guests. I found these lovely, colorful bracelets with a harvest theme, and I think they’ll be a sweet and fun moment of our time together.
I can’t wait to welcome everyone, share some delicious food, and enjoy the warmth of friendship over a beautiful harvest tea. Here’s to a special afternoon filled with laughter, good company, and the joy of giving back!
Spinach Feta Quiche Recipe Easy
INGREDIENTS
- 6 eggs
- 1 pie crust
- 2 tablespoons chopped onions
- ½ bunch fresh spinach chopped (about 1 cup chopped)
- ½ cup cheddar cheese shredded
- ¼ cup feta cheese crumbles
- 1 tablespoon butter
- ½ teaspoon salt
- ¼ teaspoon pepper
INSTRUCTIONS
- If pie crust is frozen, thaw out.
- Poke holes in the bottom of the pie crust with a fork and pre-bake for 10 minutes at 350.
- In a large bowl, whisk eggs, salt and pepper and set aside.
- Place onions in pre-baked pie crust.
- Add chopped spinach to pie crust.
- Sprinkle cheddar cheese over spinach.
- Sprinkle feta crumbles over cheddar cheese.
- Slowly add egg mixture.
- Set pie on cookie sheet.
- Top with small pieces of the butter.
- Bake at 350 ° for 24-30 minutes until completely set.
- Let cool 5 minutes before serving.
Everything looks so beautiful and the food looks delicious. The bracelets add a nice touch.
