
Hello friends, and Happy July!
I don’t usually post two blog entries in one week, but with the sun shining and summer in full swing, I just couldn’t resist popping in to say hello as we welcome a brand new month.
I’ve been settling into my new townhome, and one of the many little joys of this place is that I’m now just minutes away from one of my all-time favorite stores…Trader Joe’s. Honestly, for those who know me well (especially my husband!), it’s no secret that I’ve always had a soft spot for being near a Trader Joe’s. When we were house-hunting, it may or may not have been part of my wish list!
So, the other day, I found myself strolling the aisles…just browsing and feeling inspired…and I thought, Wouldn’t a summer trifle be fun? Something easy, festive, and light to celebrate the start of July. I decided to challenge myself: what kind of trifle could I create using just a few finds from the store?
☀️ Trader Joe’s Summer Trifle Recipe
Here’s what I picked up:
- One package of vanilla pound cake (or you can use any sponge or angel food cake)
- A container of fresh strawberries
- A jar of lemon curd
- One container of whipped topping or their delicious vanilla bean Greek yogurt for a lighter twist
Assembly is easy as can be:
Just cut the cake into cubes, layer it with lemon curd, sliced strawberries, and your topping of choice. Repeat the layers until your dish is full, and refrigerate until ready to serve. It’s tart, sweet, creamy, and perfect for a summer afternoon.
