A Summer of Sandwiches

This summer I found myself delighting in something simple, comforting, and endlessly creative: sandwiches. Once a week—sometimes more—I would look through the refrigerator, gather what I had on hand, and layer together flavors that felt fresh and satisfying.

Part of the fun has been experimenting with different breads. A crusty sourdough, a soft hoagie bun, or even the special sandwich-style bread from Trader Joe’s—each one gave a little twist to the same idea. I’ve discovered that with just a few good ingredients—cheeses, fresh veggies, maybe an avocado—sandwiches can feel like little works of art.

Today, I thought I’d share two of my favorites from the summer. They’re simple, delicious, and perfect for lunch at home or packed up for a picnic.


Deviled Egg Salad Sandwich

Ingredients

  • 6 hard-boiled eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon sweet relish (optional)
  • Pinch of paprika
  • Salt and pepper, to taste
  • Trader Joe’s sandwich bread (or your favorite bread)
  • Lettuce leaves, for serving

Instructions

  1. Peel and chop the hard-boiled eggs.
  2. In a medium bowl, mix eggs with mayonnaise, Dijon mustard, relish, paprika, salt, and pepper until creamy.
  3. Spread the egg salad generously on bread slices.
  4. Add lettuce leaves for a bit of crunch.
  5. Slice and enjoy!

Garden Veggie & Avocado Sourdough Sandwich

Ingredients

  • 2 slices of sourdough bread, toasted
  • 2–3 slices ripe tomato
  • 4 slices cucumber
  • ¼ avocado, sliced
  • A few leaves of lettuce or spinach
  • 2–3 thin slices of red onion
  • 1–2 slices Swiss or cheddar cheese (optional)
  • Mayonnaise or hummus, for spreading
  • Salt and pepper, to taste

Instructions

  1. Lightly toast the sourdough slices.
  2. Spread mayonnaise or hummus on each slice.
  3. Layer on lettuce (or spinach), tomato, cucumber, avocado, onion, and cheese if using.
  4. Sprinkle lightly with salt and pepper.
  5. Press together, slice, and enjoy a crisp, fresh bite of summer.

Sandwiches may be simple, but I’ve discovered they’re also full of possibility. Whether it’s a deviled egg salad on soft bread or a sourdough stacked high with veggies, each one has brought a little joy to my summer table.
