The Chill of Winter…& Downton

I’ve been thinking about you, so I thought I’d “ping” a quick “Hi!” and share a yummy recipe.

The chill of winter on the coast brings with it a desire for comfort.

Thank goodness for a little group I was invited to join. I call it the Downton Abbey Groupies.

A small group of ladies meet up once a week to chat, eat, and  of course watch Downton Abbey.

This brings comfort for me. Just recently we all met up, and I decided to bake up my famous quiche.

It is fabulous. I served it at many of my tea parties.

Trust me it is wonderful, and comforting. If you live in a place where it’s raining, snowing, blizzardy, or even sunny...this is the perfect comfort food, and a wonderful way to spend a little time creating something yummy.

Marcia’s Quiche

 

9″ unbaked pie shell

*10 oz. package frozen chopped spinach

*1 medium mined onion

*5 separated eggs

*1 cup milk or half-and-half cream

8-oz cream cheese at room temperature

*3/4 cup bread crumbs (first time I used organic…a little pricey however)

1 cup parmesan cheese

*1/4 cup butter

1 large can mushroom pieces and stems

1 teaspoon tarragon leaves

Salt and pepper to taste

*I used organic ingredients. Just as yummy without though.

Preheat oven to 400. Have unbaked pie shell ready before beginning to prepare

Quiche batter:

Cook spinach according to package directions; drain well. Saute” onion in butter until translucent. Beat egg yolks until light. Add milk, cream cheese, bread crumbs, and Parmesan cheese, and beat well. Add cooked spinach, onion, mushrooms, tarragon leaves, salt, and pepper. Wash beaters, then beat egg whites until firm. Fold egg whites into mixture and pour into pie shell. Bake until top is brown (about 15-20 minutes). Reduce heat to 350 and bake until a knife blade inserted in center comes out clean (about 45 minutes – 1 hour). Serves 6-8

I prefer serving quiche in a glass container. So, I let pie crust come to room temperature then place crust in 8×8 pyrex pan.
