Today is my 16th wedding anniversary and Joe & I are heading out of town to celebrate…

However before we leave I just had to share about my week…

I’m wearing an adorable apron given by a friend…while standing next to gorgeous flower art given by another💕

several friends had dropped by for a visit…

to see our new home.

I had been so excited because these ladies were some of the first friends I had met when moving to the Oregon Coast…

and the other visitor was a most recent new friend…

I think I found a space to hang my forever flowers…just a little over and up…


The best I can make the bed when Cami won’t move…


I had planned to serve coffee and pumpkin bread…but once we all started chatting…and touring…

I served the coffee..and forgot about the pumpkin bread...(no worries…because it’s a perfect excuse to have everyone back again!)

And just one more thing before I go…I want to share the best quiche recipe ever…

COACH’S QUICHE

INGREDIENTS

9 inch unbaked pie shell

10 ounce package frozen chopped spinach

one medium minced onion

five separated eggs

1 cup milk or half and half cream

8 ounce package cream cheese at room temperature

3/4 cup breadcrumbs

1 cup grated Parmesan cheese

1/4 cup butter

one large canned mushroom pieces and stems

1 teaspoon tarragon leaves

salt and pepper to taste

DIRECTIONS

Preheat oven to 400°. Have unbaked pie shell ready before beginning to prepare quiche batter. Cook spinach according to package directions; drain well. Sauté onion in butter until translucent.

Beat egg yolks until light. Add milk, Cream cheese, bread crumbs, and Parmesan cheese, and beat well.

Add cooked spinach, onion, mushrooms, tarragon leaves, salt, and pepper. Wash beaters, then beat egg whites until firm.

Fold egg whites into above mixture And pour into above mixture. Bake until top is brown about 15 to 20 minutes. Reduce heat to 350° and bake until a knife blade inserted in center comes out clean (about 45 minutes to one hour).
Serves 6 to 8
